Wood-barrel aged Winter Herring. 2 options: either Aged over 1 year, or Aged over 3 years in wood barrels made from PNW Douglas Fir trees. 

The barrels' breathability reduces the sauce significantly over time, resulting in a highly concentrated product with strong wood flavor notes at the beginning, moving quickly into mellower and gentler notes.
